How to tell if I am getting good birds?

First , you need to learn the names of all the parts of a chicken. So when the breeder tells you they need improvement in the part in question, you know what they are talking about. Go to chicken shows and ask questions. See if a breeder will mentor you and teach you what you want to know.

Ok thanks

Seramas are cute and unique birds.
But if your goal is table eggs, that is probably the worst choice of breed after perhaps aseel or phoenix.
Many high quality/show quality seramas don't even work for breeding since they don't have the body capacity to produce eggs capable of hatching.

I replied to your conversation in greater detail with some breeder links.
