How to tell if roo or hen"

I bought from a reputable dealer and suppose to have 39 hens but how do I tell? Some are laying and there is 8 different breeds.
Do only roos get comb and beard? None have the big tail feathers. Only about 5 have started to lay so far at 21 weeks. Help!
 
Large combs and wattles and saddle feathers for roosters, when they are all together you should be able to tell the difference. the hens will have smaller combs and wattles and no pointy saddle feathers

Just like kezabel said, roosters have larger combs and wattles, as opposed to the hens. The hens will still have them, but they tend to be smaller. Roosters also grow longer, more flowing tails, though these are one of the later signs that a cockerel is really a cockerel.

Hens don't have, as roosters do, rather shiny, thin, pointy hackle (these are around the neck) and saddle feathers (on the back, between the wings and the tail). Hackle and saddle feathers tend to hang off the rooster's back, sort of like long, flowing grass. (Pardon my poor metaphor.)
