Thank you everyone, for all the good advice.
No, I won't be getting rid of anyone who is in molt right now. I know that can stop production. I am only going to thin out the older girls though, who arn't molting, and the roosters.
I will look for Comb and waddle color, space between pin bones, dry and shrivled vent and skin color. I think all these things together should be a sure bet.
I have too many chickens to use the other methods mentioned.
