How to use the whole animal (waste not want not)

I want to learn how to make blood sausage once I learn to do the deed.

Also If you decide to skin your bird rather than pluck. you can preserve the hide simply with salt OR actually tan it with a few simple chemicals. I have seen Rooste pelts offered for 20 bucks or more. Fly tyers use the little face feathers too.... so they buy the whole pelt.

The trick is to leave the head on the pelt and remove the brain tongue and eyes for preservation.... No meat in the pelt. I am hoping to do Guinea Fowl for my first ones...

Wow deb that sounds neat....
I'd really like to find out if I can use the intestines for sausage casing, I guess they be pretty skinny sausages, maybe not.
I know you can eat the intestines I just have no idea how to clean them to eat them...

I am thinking breakfast sausages..... cleaning i believe involves flushing then turning them inside out....?

but I have seen them after cleaned of course.... I have seen them skewered on skewers ribbon like then marinated and deep fried.... but I imagine you could bread them as well in tempura....

Ok Here is a video of cleaning lamb intestines..... The same could be done for chicken as well.
this person is turning the intestines inside out to clean the inside.... I imagine they come from processing just rinsed inside out with water.... So this would be the final clean

The other sites where I saw they were cooking chicken intestines on a skewer like street food.... Those intestines were split I am sure by running a knife inside and splitting the intestine.... That would make them very very easy to clean

Dad used to eat Chitlins with his family and when i asked how they cleaned them he said they flushed the pork intestines with the hose first then turned them inside out for a propper clean once in the house. They were a Sharecropping family... NO food was wasted.

Personally for livers... I grind them up, mix them into meatloaf. Can't even taste, which is a plus because I'm not a liver fan, but I know there nutritious.

Oooh that reminds me I have a small container of livers in the refrigerator that need to be cooked now....

I simply salt pepper and garlic them and toss a sprinkle of poultry seasoning on them as well... Cook in Bacon fat till they are just done..... OMG.... good.

I learned to eat liver through tasting my first well cooked chicken liver.... and I never went back to hating it... only Hating the way it was cooked.
