Well, I butchered 2 of them tonight just to see. They dressed out at 1 lb and 1 1/8 lb. I am totally fine with that.
They're big enough for a great meal for my husband and I once you add sides. Total win.

Next cull, keep the feet. When you're finished eating the chicken, use the bones AND FEET for a stock or broth. Feet add a TON of collagen and other stuff I can't think of right off the top of my head. Makes the stock/broth much heartier.
 
They were amazing! Kinda feel bad saying that but yeah, they were. The meat was tender like a cornish cross (which they weren't but tender because of the young age) and the flavor was like a dual purpose or heritage bird.

It is the young age that makes a tender meat, not the breed. Good to hear -- another convert to the "Butcher your rooster young" club! They do not get any less annoying as they get older. Keep 1 if you are breeding, that is one reason I am only wanting to raise 1 dual-purpose breed! One or 2 roosters is plenty. But, people in the city can not have any, so as soon as they crow, to the freezer they go.
 
Yeah, about half the ones I did were black sex link. Didn't think it'd be worth the effort when they were younger. But I also have pigs, so if I need to dispatch a bird, I can toss the body to the pigs without having to gut and pluck. In the end, I'm getting something out of it when my sow has piglets or I butcher a pig. So if a rooster annoys me too much and is not worth the effort of cleaning, well he's pig food.
My neighbors have pigs guess I'll hit them up when its disposal time. Thanks I was pretty sure that would work, but to have confirmation, priceless.
