huge eggs

So the past two days, I got 2 huge eggs from my 6 1/2 week old jumbo browns. They were laying soft shell eggs for a bit before these big ones.
The first one is 18 grams and double yolked. Here they are:




Today's also 18g. Haven't cracked it yet, but probably double yolker too.
 
What do you do with your eggs? Do you eat them like chicken eggs, are they easy to flip over for over easy? We don't have Coturnix, we have Bobwhites, we plan on using the BW eggs in soup. I don't have the room to house more Bobwhites, so they will just be for eggs and as pets.
 
I eat them by boiling, and also sunny side up. They taste just like chicken eggs but creamier because of the higher yolk ratio. When I did the sunny side up, i used about 6 together, equivalent to about 1 chicken egg. Flipping is easy if your pan doesn't stick.

Thanks, have you ever eaten Bobwhite Quail eggs? I know they are much smaller. I have eaten the quail eggs from our Asian market, they look like coturnix quail eggs, but I don't know if they are.
 
Have not eaten bobwhite quail eggs before, but I would imagine they would be similar to regular quail eggs in terms of eating it. The eggs in the market are coturnix quail eggs indeed.
 
I tend to hard boil the eggs I don't use for hatching, and sometimes I'll use them as substitutes in recipes for chicken eggs... I've been told they are good pickled. If I ever really have a lot of eggs and time I would like to do an eggnog!
 
My son did a whole plate of deviled quail eggs. He got a kick out of it. I will have to find the pictures.


That's what I can't wait to do! It will be so satisfying to pop little tiny deviled eggs in your mouth! LOL...and it is probably a really good presentation. Plus, quail eggs are sooo expensive in the store!
 
Got another huge egg today from the same cage. That must mean one of them is consistently laying double yolkers! Thats some nice eggs there! Will eventually try to hatch a few of them just for experiment.
