I know what you mean. I hate that you can't verify the actual humidity and I know it seems wrong to add water when it reads 87% but I think it's the right move. Hopefully someone else will chime in so you don't just have to take my word for it, lol.
I have 7 different thermometer/hygrometers and I've had the best luck with these......
