It helps soften the shell to make it easier for the chicks to break out, and it keeps them from becoming shrink wrapped once they pip and start to hatch out.
 
Basically, it helps soften the membranes, making it easier for the chicks to pip and helping prevent shrink wrapping (when the membrane encloses and sticks to the chick tightly, making it nearly impossible to hatch).
