I actually cooked a real dinner tonight!

Yep I m a single dad feeding two monsters and my folks.. CROCKPOTS ARE YOUR FREIND...... I do alot of chicken, with cream of whatever.. also roasts beef/pork/turkey toss in meat add potatoes (skin on) add carrots and celery.... VOILA... Also do meatloaf with potatoes.. Yummy
 
a rice cooker is great too. the one I have has a delay setting so set up the crock pot and set the rice cooker, when you get home nuke the veg and DINNER

Have you ever tryed the 'Fix-it and Forget-it' cookbooks, lots of good ideas in those

twenty minute meal from sav-a-lot

The stuff I have to buy I buy in bulk.. and when I want the meat budget to stretch I cook something like this... And since I'm going vegi for another week you can leave out the chicken..

3 chicken breasts 1/2 way thawed out. Chop into 1" squares.
2 one dollar bags of stir fry veggies
2 cans of beer (one to fry with, one for consumption)
Season... I usually use lawreys, garlic and onion powders. shotglass full of A1 steak sauce.
Cover the skillet and let it all cook stiring occasioally
2 cups of rice, appropriate amount of water

Twenty minute meal from start to finish and very cheap to make. Since I buy my rice in 20 and 50 lb bags... 2 cups of rice......... pennies? 3 chicken breasts... expensive part of the meal 1.50 total, the one can of beer used to cook... about .75 small portion of seasonings.. .25 or so? Even less if you use your own garlic and onion powder

0.25 rice
1.50 chicken
0.75 beer
0.25 seasonings

$2.75 and twenty minutes of your life. enough to feed two adults and 3 adult sized teenagers
