I did it! Hard cooked my duck eggs

Lainey....how do you steam them?

Just like you would steam anything else

I get out my big stock pot and fill it about 1/3 full of water then put the steamer pot that came with it on top and set it to boil. once it starts to steam I put the eggs in and the lid on and let em go. I do chicken eggs for 15 min and duck eggs for 20-25min depending on the size. Once the timer goes off straight into and ice bath until they are cool. I do 18 eggs at a time and keep them in the fridge in the shell for snacks during the week. whenever I feel like an egg I can go to my fridge, grab an egg, peel it and enjoy

I bought a pack of 4 different natural sea salts at costco - all from different regions, there's a pink, a gray, a green and a white, slightly different tastes and very different mineral content, which gives them the colors. probably wouldn't spend a lot extra for them, but they are kinda fun.

yes!
but work out your technique for getting them to peel first - like all fresh eggs they can stick to the shells.

you can sneak up on it...
make your scrambled eggs with half chicken and half duck eggs... you'll notice they're better, then try all duck eggs... once you do it you'll be hooked.

Thanks that is on my to do list tomorrow, but I'll have to do my chickens eggs my Muscovies have stopped laying for this year.

This sounds like something I have to try. I've always boiled the eggs. It's true that fresh eggs just don't peel. I learned to put a lot of salt in the water and that did help a lot. I'm not talking a pinch but almost a handful of salt. That's for chicken eggs but I'm sure it will work for duck eggs too. All this sound so good.

I'm sort of with QuackerJackFarms... I get irked about eating the duck eggs too. I don't know what the big deal is either. The color, thickness of the egg maybe.... I don't know. Weird, I know.

You guys will be SO surprised at how easy they are to peel steamed.....I can't wait to peel another tomorrow morning. I am telling you, they were really pretty and smooth. AND, I even steamed one egg I got this morning. Lainey is a genius!

zzGypsy....try steaming and tell me what you think about the peeling part. My girls just peeled two, and only ONE bit of the white came off....the rest was smooth and gorgeous!!!
