I do not understand humidity?

I am going to be ordered my incubator and setting my peacock eggs in the next 2 weeks or so, so I have plenty of time to get things ready. What is the best way to keep the humidity? The incubator is pre set at 99.5F so I am not worried about that, any tips and other suggestions are greatly appericated.
 
No I haven't done that part yet. What should the humidity be at? I read that you keep it around 49% then raise it during lockdown to 70%. Would that work?
