Speed secrets?

No the thing that I do that may make it quick is I kill 15-20 birds at a time and put them in a 40 gallon tub. After they are killed I scald them one by one and pluck them which takes about 45 sec a bird.

Again I get a pile of birds on the table, I pluck and scald all 15-20 birds before I start to eviscerate. When I start, I chop all the feet off.... all the heads... then start pulling everything out.

Once you get the feel for where everything is, you get faster with time and practice.

It takes about 30 minutes to get them killed, scalded, and plucked. Try to scald and pluck while some are bleeding out, it makes thing go a little quicker. It takes about 30 minutes to seperate everything and put the birds in an ice bath.
