I have a serious rooster problem.

is most of the commercial chicken we eat not Cornish X? That way they don't have to feed them long before they can process and sell the meat?

Most of the CX are sold in the store as raw chicken (parts or whole) or goes to restaurants. The "processed" stuff like burritos, soup, chili, etc. is more than likely old layer hens. I have seen McDonald's "chicken nuggets" made from fresh, ground CX meat. Now that looks like a huge vat of upchuck! lol They don't just dispose of the older animals, we eat those too.

Yeah...I like eating the Cornish X. Have eaten a few of our old hens as chicken and dumplings, but not a fan of the roosters we've eaten. Just not a fan of that rooster taste and consistency. Lol. But I feel sure my dogs will like it extra

Yes older chickens do have that different flavor than CX. I guess if they lived longer they would taste about the same as the older birds. Some of mine have tasted a lot like rabbit or squirrel.
