try this:
on the inside
marinated artichoke hearts (the kind in the jar) drained and sliced long ways.
onion salt
jack cheese

top with
sour cream and tabasco

Great looking omelet, and it probably tastes even better!

I think I might start a tradition of Sunday night dinner being an omelet. It's one of the few ways I like eggs!

I've been wanting a good omelet but our pans are NOT good omelet making pans

I got to get me a good omelet pan! I got 39 eggs in the fridge right now... its going to be crustless quiche for dinner...............
