Baked the butternut squash tonight for dinner - did the brown sugar and butter.
It was better than I expected - even DD ate it and she's picky.
My 3 yr old wouldn't touch it though - he won't eat anything mashed.
I have some left that I mashed and left plain -can I freeze it?
Get one, slice it in half then remove the seeds and gunk. Then rub it down really well with butter and sprinkle with brown sugar and pecans. Microwave until soft and scrape the squash out of the shell.
I have a yummy acorn squash dish. Its a twiced baked. cut it in half, remove seeds, bake until soft. The scoop out the inside, mix with parmesean cheese, cooked bacon and spinich, put it back in each have and back until cheese is bubbly.. mmmmmm!
