There are always exceptions, but MOST cats won't bother grown birds.
Unfortunately, unless you know the cat personally you have no way of knowing which ones will and which ones won't. I wouldn't assume that a cat is harmless, just from personal experience.

Well, "Curious George" might have just gotten more than he bargained for. He made a tactical error by coming into the backyard while the dogs were out (the girls are locked up in the run. Fifi is still in the chicken hospital. She still doesn't have a great appetite, has runny "stress poo", and still seems a bit out of it, so I'm having to force feed her. She is bright eyed and alert but seems to need some rest. Maybe it's me fussing over her wounds so much that's stressing her, I'm not sure. But she needs wound care).

Anyway, Curious George, confident in his abilities, strolled right around the corner of the house without a care in the world. He spotted my dogs at the same time they spotted him and he froze. The dogs locked on to him and were at full speed towards him in three strides. One of my dogs is an italian greyhound who can easily out run and out turn a cat.

Oh did Curious George bolt when he saw that freight train coming. His feet turn to blurs as he lit out of here like something from a Looney Tunes cartoon. Lucky for him, the dogs hadn't been close when they spotted him or else his fait would had been sealed. The greyhound was but a foot away when Curious George got to his salvation and tore his way up the fence pole. He didn't even pause from on top of the fence to look back to sneer at his enemies. No, he was up and over and out of there.

I hunt with a pellet gun and can take a wild boar at 35 yards. There are pellet guns that are just as if not more powerful than your average small rifle. Pellet guns are not Toys.

Thinking about the wild boar we have around here, hunting them with a pellet gun is foolish and unethical. I'd check your laws to make sure hunting boar with a pellet gun isn't illegal.
 
What about a hose? Just spray Curious George, and hopefully that will scare him off. Maybe after a few times doused with the hose will make him more wary, and even just get scared by the sight of the hose? Never tried this myself, but I'd rather try the hose before bringing pellet guns into it.

Who in their right mind would assume someone talking about stinging a cat with a pellet gun would be using a 45 or 50 caliber pellet?

Wounds from animal attacks often require antibiotics. Especially cat bites.
