it's a carrot cake, with cream cheese frosting.

ok!
3 cups oat flour (GF)
1 cup sugar
2 tsp baking powder
sprinkle of salt
3 eggs
1/3 oil I used coconut melted)
3/4 cup shreded coconut
3/4 cup raisens plumped (I also poured in the extra water that was plumping them)
1 cup milk
grated zest of one orange
2 tsp cinnamon
sprinkle of nutmeg and cloves
mix it all together and bake at 350 for about 30 minutes or until toothpick comes out clean. easy peasy

thought there was something missing
1 1/2 cups of shreaded carrots. there are also nuts that I forgot to put in our cake!

Haha ok. I wondered if maybe that's why the shredded coconut was in there, to give the illusion of carrots.
