You could make meatball subs with the left over meatballs!
I had spaghetti pie before that was so good, I wish we had gotten the recipe!
Here is one I found!
SPAGHETTI PIE
6 oz. spaghetti
2 tbsp. butter
1/3 c. Parmesan cheese
2 well beaten eggs
1 c. cottage cheese or ricotta
1/2 c. shredded Mozzarella cheese
left over meat sauce
Stir in butter, eggs and Parmesan cheese in to spaghetti. Form spaghetti mixture into crust in deep pie plate. Spread cottage cheese over spaghetti crust.
Fill in with meat sauce. Or slice leftover meatballs. Bake 20 minutes at 350 degrees. Sprinkle Mozzarella cheese over top. Bake until melted (about 3 to 5 minutes). Let stand for 5 minutes before cutting.
NOTE: Will require longer baking time, if all ingredients are cold. Serves 6.
