I need to ask some questions about large fowl chickens

We have (some of them we had) 12 Ameraucana's and all of them are flighty and the only one that lets you pick her up. She's not choosing to she ducks down which is
something all hens are bred to do so they'd be easy to butcher (we don't butcher though) and we can pick her up when she does that.

Ducking down is a mating response.

My EE are not flighty. Rather they run to me for attention. Maybe a difference in the lines.
