I need to confess!

I will try and cook with them, but I feel like the girls would be sad. Okay another confession.......I have NEVER eaten any eggs except from the store. Never had a farm fresh egg so I have no idea what the taste difference is from store bought. I told you I was weird.............I just love to look at my eggs and spread the joy to my friends. They can't get enough. My chickens are my salvation from a high stress job so they are worth their weight in gold to me. They beat therapy

Yea you should really eat them and enjoy the fruits of your labor...
I think my first egg my chickens laid was still warm when i put it in the skillet

my kids put up a fuss about eating the eggs because they weren't from the store--mine are laying enough now that I don't have to buy any from the store so the kids have to eat our chickens eggs or else they don't get any. My kids love eggs and we go through lots here. so gradually I am seeing the kids start to eat them--yeah!

I love them and whats better than knowing where your eggs came from and what is fed to the chickens who lay them? Also, just knowing they are fresh!
 
Okay, I admit it was a bit weird at first, I mean, this thing just came out of my chickens butt! and I'm gonna eat that? and sometimes they get their poopy feet on them, etc...etc...Just start slowly, and soon you will find the idea of buying an egg from the store, from a battery caged hen, just kind of unappealing. I mean, you KNOW, that your hens have had a good life, and are happy to give you eggs in exchange for all those treats...
 
Yeah, I hate to admit it but I had a bit of a phobia with this at first myself. I mean I wasnt much of an egg eater before my hens came.
But I got to thinking about it.. the gifting back and forth. I gift them with shelter, food and a very large run and lots of attention and treats. They gift me with their eggs. I cant regift them.. lol..
But really the main thing for me was this....
Those store eggs made me feel ill everytime I ate them. No kidding!!! So, I tried one of my girls eggs. The yoke was waay more yellow than the store bought eggs which to me was a little weird. But I fried it up, had a piece of toast and was totally amazed!! It was wicked good.. and.. I never felt ill after eating it.. Bonus!!
Plus, I know my girls are treated well, fed well and with out artificial this and that.. waaaay more healthy for me and my family.

I was that way for about 5 minutes with the first egg my quail hens laid... Tonight I needed an egg for cornbread, and rather than get a chicken egg out of the fridge, I grabbed 5 quail eggs and used them instead. YUMMY!!

My husband was so reluctant to eat eggs fresh from our own chickens. The first time (actually, the only time, so far) I cooked them, I mixed them with the store bought eggs I had in the fridge. Even blended with store bought, the difference in taste was noticeable. But, it wasn't a bad noticeable, just a bit more there. And, the color of the scrambled eggs was much more yellow. Surprisingly, a few nights later my 8 year old asked for fresh scrambled eggs for dinner. He's not a huge egg eater. He definitely prefers my husbands scrambled eggs to mine. AND he wanted FRESH eggs! I was amazed. We really only eat eggs on the weekends, when my husband makes a mess of the kitchen, because I'm not usually home. I've brought two dozen to work so far. Most of the guys are quite leery of the eggs, but there are a few that are on the waiting list. I hope to start baking with them in the next day or so.
 
Try it, if you don't like it, you don't have to do it again. But, you need to try things in life at least once, twice if you like it (and it may become habit forming) lol.
The comment made about getting sick from store bought eggs - I agree, no more heartburn from eating eggs for me.
And, if it weren't for my girls and their delicious and nutritious eggs, I swear, I would have starved to death on that ickky liquid diet I was on for 10 weeks after I broke my jaw in 3 places last Christmas.
Thank God for backyard fresh eggs!!!
I love my eggs!
Oh, and since eating an average of 1 egg a day, my trig and choleserol levels are still low and healthy. (I work in a lab, it's fun to keep tabs on things. lol) Fresh egg salad sandwich - my usual lunch at work. Much better than McDonalds.
Enjoy them! You worked hard for them.
