I need your help.

Have you ever tried making an "egg salad"? It is basically a tuna salad without the tuna. We make it quite often for sandwiches. Works great for us. Quick and easy.
 
suggestions:

Welsh rarebit (basically an egg-and-cheese custard cooked in a double boiler) .. over crackers, rice, pasta

frittata -- basically scrambled eggs poured over anything veggie stir fried -- try something unusual like water chestnuts or previously-cooked squash or sweet potatoes or spinach

French toast -- it's not JUST for breakfast ... or make any kind of veggie or fish sandwich, dip in beated egg and cook like French toast (fancy name for that but I can't bring it to mind)

tofu can be cooked so many ways there isn't enough space to list here ... think soup as well as solid food ..
 
also remember, beans of all sorts, peas of all sorts, even peanuts !

meatless chili ? Greek chickpeas (hummus) in pita bread ? lentil soup with shredded carrots, onions, and green peppers ? or green peppers stuffed with rice and beans ? stuffed cabbage leaves ? nachos ? guacamole ?
 
I have a old catholic manual that my grandfather used to read before he passed. I think it said fish was considered meat. My mom hates all kind of fish and shell fish. She will probobly eat a pizza with tomatoes on top
