i processed a few pekin ducks

you know, i think you are right. the ducks are pretty big for their weight. i'm thinking of the duck i cooked from: the chest and legs meat fed us yesterday and today, the rest of it i'll split it in two and i'll cook half as a pilau and with the other half i'll make a soup. duck soup is one of the best soups you can make. so, one single duck will feed us for almost one week. wonderful!!!

I had never heard of the newspaper, but it seemed less messy then the wax and if the 10 or 15 minutes waiting in the newspaper frees the feathers that's another bird that can be dressed while the other is waiting.

with the feathers they have, i bet they dont feel any cold. but the water is gonna freeze and it is enough work for me in the summer. in the winter, i will relax. at least next winter. after we move to our house, things will change, i guess.

we have stores that bring one day old ducklings from Hungary. you have to order them. we pay 1,66$ for a duckling.

I was thinking to myself "how the hell do they get birds from Hungary???" lol, never noticed where you are from! How wonderful to be talking with someone about a cshared interest, clear across the world. So glad to know you Jenny Kap!
