i didn't know that about the pimms!Both leaves and flowers are edible. Use in salads or as garnish. You can also cook it like spinach.
I vaguely remember my mother once making borage soup with sour cream maybe?
Borage is the classic garnish in Pimms - though now largely replaced by mint.
the leaves don't look particularly inviting with all the spiky bits, but people eat nettles too and somehow survive to tell the tale. lol! if you've ever gotten stung by a nettle.REALLY stung. you probably wouldn't think about eating them. but maybe that's just me
i'd try the borage though. it hasn't done me harm like the nettles.
