All seriousness here - that recipe looks great! But yes, I would improvise myself
I would still use 2 onions ( I like onions, put them in anything I can get them into) but, good grief - only 8 slices of bacon?? No way - need atleast 10 or 12! LOL I would probably also double the recipe and freeze one for later. I think the hubs would like this, he liked a bacon spinach quiche I made a while back (yeah, it had onions and peppers)

I used like 9 strips of bacon, because it would have left one lonely strip. So, yeah, I don't always do what a recipe tells me.
I like onions too, just not sure that I like two whole ones in a dish. Lol
