I think I got a jumbo today!

The jumbo was a double yolker. Both yolks are normal size. It became a quiche!

It really does look great. I'm feeling like it might be breakfast time now! :drool

I have made a breakfast casserole. But never tried quiche yet. :hmm I guess you might as well share your recipe... even if it's a little off topic. ;)

I just used pioneer woman's quiche recipe. However, I did not use as many onions as she called for. I also cooked the onions and cut up bacon together. I like to skip steps when I can. I used a pre-made pie crust too. I will find the link here in a bit after dinner.

All seriousness here - that recipe looks great! But yes, I would improvise myself:)
I would still use 2 onions ( I like onions, put them in anything I can get them into) but, good grief - only 8 slices of bacon?? No way - need atleast 10 or 12! LOL I would probably also double the recipe and freeze one for later. I think the hubs would like this, he liked a bacon spinach quiche I made a while back (yeah, it had onions and peppers:cool:)
