The head/caruncles change color depending on the turkeys mood. At least I think it's mood related

As far as I know, toms and hens taste the same but toms are bigger. Our poor hens never got much over 20 lbs last year. A BBB tom at fair was a tad over 40 lbs!

Hehe .. we definately have three toms - they were puffing their feathers last night

Not sure about the others yet though.
