Dieter's Fire Eggs, a kind of spicy pickled egg, never lasts long enough to can around here:
Bring to a boil: one large can of tomato juice, a hefty spoonful of each: curry, garlic, tumeric, mustard, peppercorn, and whatever else strikes the cook's fancy, a few bay leaf, a cup of vinegar. Pour over still warm hardboiled, peeled eggs in a hot glass canning jar or other big container (preheating keeps glass from breaking). Plastic will stain, metal will leach from the acid. twist on lid, let cool and keep in refrigerator. Try to keep family from eating it at least two days. It is supposed to keep 2 weeks in the frig, but ours are ususally eaten before then.
I also send some fresh raw eggs to the office to trade with other folks. Elderberry jelly, jalepeno jelly, home made wine...
If you donate them, can you get a receipt and deduct it as charitable donations at tax time?
