What is the crowning if so what color will it be

You need a couple more weeks (at least) for them to be sexually mature. That coloring cannot be sexed by the color of their plumage. You'll need to vent sex them (once sexually mature) or wait for either crowing or eggs.
 
I'd say it's a girl. Italians (prettty sure that's her color) can be feather sexed. Usually girls have spotted chests, which she at the moment doesn't show much of, but italians have a second way to sex them as well - females have black markings on their head, males have brown. This one has black. I could reliably sex my italians at 2-3 weeks last year, so I'd say she's old enough to be accurately sexed.
 
@DK newbie could you please post a picture of the head turned to the side (not fronting). Also, if you are keen on taking a picture of the vent as well. This quail does NOT have spots, so if only looking by the spots it is a male. That's why another picture of the head would be helpful.
