Congrats Kathy! Now comes the long wait from pip to zip! Lazy buggers! This has been the slowest BYC weekend I can remember in a long time! I closed an egg auction I had up because there is no one on to buy! I'll relist tomorrow.
Michael is fishing with his daughter and grandson today and I am home making ricotta cheese for a spinach lasagna I am cooking tonight. I had never made any cheese before but it seemed so simple I had to try it last night. OMG it is so good! I used lemon juice as my acid and the ricotta comes out so thick and creamy you can eat it with a spoon. It is more like cream cheese. It still has a slight lemony taste which should go well in the lasagna. I am having to make a second batch right now due to losses from taste testing. I lost quite a bit eating it from the spoon and for my lunch I sliced a baguette and slathered it with the ricotta, drizzled it with olive oil, and topped it with chives, lemon zest, coarse sea salt, and cracked pepper. I lost more to this experiment! So the curds and whey are separating right now in batch number two.
I am glad there are a couple of posts between my blood ring picture and this one!
My juveniles just figured out what their wings are for today. It looks like some strange flock of migratory freaks flying in a group of 20 across the chicken yard, six inches off the ground! And then back again, and across again, and well, you get the picture. Hopefully Stella will keep her big mouth shut about what they can really do with those wings!
Mary that lunch looks yummy! So now I need to find a ricotta recipe, and then make some lasagna. My family will love it, I hqvent made lasagna in a while.
