Ideas on how to use mint?

I make a strawberry sorbet with mint and it is so good! Very refreshing. There are also lots middle eastern recipies that use it. Google "mint recipies" and you will be inundated!
 
My daughter just made the most awesome vegetable dish last night with a little mint. She wanted to try something new and wow was this a hit! This is not too sweet or minty, it's just right!

In a small bowl mix together 1 tbl. sugar and 1 tbl. minced mint. Set aside.

Boil 1 lb. sliced carrots until soft. Boil 10 oz. frozen peas just til done, a minute or so. Drain both and mix together. Then toss with 1 tbl butter and mint mixture.

This was so good I can't tell you! Who wouldv'e thunk it!?

I also forgot about mint jelly. I've never done it but I think I'm going to this year. I've seen it, and it is pretty in the jars. I love hot mint tea and I guess you could put the jelly in that. Hmmm...I actually don't have anything planned for today, I ought to dig out that canning book!

I've seen mint jelly, but I don't know what people use it for except mutton, and I don't really eat mutton. A mojito sounds good, is it too early for one now? Must be 5 oclock somewhere!!
 
Chocolate mint cookies. . . Add 1-2 tablespoons of chopped fresh mint to your favorite shortbread cookie with some mini chocolate chips.

Chocolate mint brownies . . . Add 1/4 C. of chopped mint leaves to the batter.

Use as a seasoning for vegetables . . . I've seen mint used with carrots, sweet potatoes, and zucchini. Add 1 tablespoon finely chopped mint after cooking the veggies. Or mix into your favorite marinade. Marinated Zucchini with Lemon, Mint and Chilis. Mmmmmm!

Fruit salad . . . Add 1-2 tablespoons chopped mint to your fruit salad to give a refreshing flavor.

That's a good start.

You can use it in anything! We love it. In teas, in chocolate, in baking, in just about anything you cook will go great with a little fresh mint. It is great in marinades. Lemonades. PotPoupori or in flower arrangments. Dry it and use it too. Possibilities are endless
