Ideas on how to use mint?

Use the mint leaves in dog biscuit recipes!! Dry the leaves and make some sachets with them. Can also make those orange clove potpourri balls with the mint leaves next to the orange skin, then spiked with the clove. Boil some leaves down, use the solution in a spray bottle to freshen the air (has to be used up rather quickly). Crush some dried leaves, sprinkle on carpet and vacuum. Smells great!

I know, it is taking over my garden! A great way to use it is to just put it in a pitcher of water and let it sit to flavor the water. I was at a resturant once and in the pitcher of ice water was mint, strawberries and rasberries i think. It was so good. I have to start doing that, my mint is popping up everywhere like weeds.
 
I always put some mint in lemonade to make it more refreshing.

Spring rolls, and asian salads do great with some mint added-- lots of thai food includes mint.

Mint jelly is really easy to make, and lots of people like it. You can tone it down with honey and a little lemon and make a "get better tea jelly"

I, personally, would just warm up some cream with whole mint leaves... not super warm, and when it 'smelled' right I would cool it, whip up some egg yolks with sugar, add the whipping cream, whip that until fluffy, run through my ice cream machine, and at the last minute add in shaved/chopped chocolate of my choice

I saw once, where you ball or cut some melon into cubes, any melon you like, mix with a little honey and chopped mint. Leave in fridge for flavors to come together. Sounds refreshing, and if I could get any mint to live at my house, I would try it.
