... Then what would you call the offspring of one EE parent. Say I have an EE roo and a BO hen.... would the chicks be EEer mixes, or just EEers?

And if the roo was an EEer and the hen a white layer, would the resulting offspring produce blue/green eggs?

If you cross 2 EEs then you will end up with EEs. If you cross an EE with something else then you end up with an EE mix or some other people may just call it an EE. If you were to cross an EE with say a BO then you could still get a hen that lays brown (any shade of), green, or blue. An EE is just a bird that somewhere in it's family tree there was a true ameraucana or araucana. The further out they are bred from the original the less likely the chance that you will get blue or green eggs.

Also- if you know what color egg the roo came from, and you cross him to a white egg layer, you'll have better odds of seeing colored eggs. Especially if the female offspring have pea combs. It's a long time to wait- I know. My first 2 EEs just started laying (they are bearded with pea combs) and they lay brown eggs.
