There are a couple benefits of fermented feed, besides the added vitamins and breakdown of anti-nutrients.
The chickens don't bill out the feed, therefor much less waste.
The fines are bound up in the mortar like mixture. The fines are where the added micro nutrients end up like minerals, vitamins and amino acids.
 
I get around the billing problem by having feed as large particulates where possible. This means intact grains which not a problem so long as grit levels are adequate. My adult birds can ingest whole acorns and three week old chicks can ingest whole corm kernels. During summer month formulated feed is applied in the form of pellets for adults which also negates billing.

Finally providing food in a limited ration rather than as free-choice encourages birds to clean up even particulates.
