If I have a rooster will I still be able to eat the hens eggs?

I often do not gather eggs for a couple days and without incubation (hen brooding them 24/7) they are perfectly fine. They will not develop into embryos.

If you incubate fertile eggs, yes, a chick will start to develop. If you gather the eggs every day and do not store them at incubation temperatures, they will not develop, whether or not they are fertile, even if you have a broody hen sitting on them.

If you store them at incubation temperatures, you are providing a situation where bacteria can really flourish, whether they are fertile or not. Do not store them art incubation temperatures, whether or not they are fertile.

Do I need any permit to sell? And if I were to hatch the eggs, how could I prevent cross breeding?

If you sell "commercially" here in Florida, you will need a permit and a lot of "stuff" to be inspected. And it's hundreds of dollars in licensing fees. Would probably only get caught if you were advertising. But "giving" them to friends who pay you a "delivery" fee doesn't count as selling in my book.

Whether you need a permit or not depends a lot of what state you live in. In PA, you really don't need anything to sell to friends (and you can reuse egg cartons). Hopefully, someone from your state will chime in.
