If my hen gos broody can I let her hatch some chicks and then take them away and sell them? If so when should I take the chicks away?

that would be up to you

personally I would let my hen raise her chicks until she is done with them, but I have had several EE's go broody and do a wonderful job sitting but end up being terrible mothers. So anytime you let a hen hatch out chicks, you need to keep a close and watchful eye on her. I know several people take the chicks as soon as they hatch and some wait.
