I've been calling meat processors here in southern Illinois all day trying to find someone that will process 40 chickens for me to serve at an upcoming farm event. Initially we had planned to slaughter the birds ourselves and we still could... However, I'm not finding any information regarding the regulations or necessary permits/ inspections that we'd need to process the birds and then serve them restaurant style at a farm event.
I was thinking it would be easier to take them to processor... but there doesn't seem to be one to take 'em to.
Anyone else trudged this slippery slope with any success or additional info to share?
