Very beautiful! The Tom is a lot darker than I expected too. The one above is how most of the photos I've seen look.
He was a lot lighter when I got him. This is a pick of them from the ad. I got the white with the most color ( Tom from above), a red (jake I ate because he kept getting picked on) and I thought a bronze (hen)

I would almost think maybe the tom you posted would qualify as sweet grass just based on the photos I've seen of them.

What's your hen look like? If they were both sweetgrass then they would breed true according to Porter's turkeys website.

in another thread R2elk said the poults look like calico and red bronze....
later on I posted my hen and he thought looks like maybe a Narragansett Semi-Color Semi Gray... which explains why there were yellow chicks this breeding
