Find your market & you'll do ok. There are more and more people out there that want to eat healthy food. Make sure you calculate your costs and pay yourself for your work.

And tell people the story of your operation - compare and contrast to the commercial chicken operations (Include pictures, that convinces a lot of people!). Also, it's finally coming out in the news about the residual arsenic in commercial birds from the growth enhancers they use. Point that out, too.

When I first bought good meat, it tightened my pucker string a bit, but we just did without some trivial stuff to pay for it; we figure healthy food for our family is worth it. And then you're careful not to waste anything, and you eat a little less meat, which from a health perspective isn't so bad. Heck, we even save our carcasses and boil them down for the best chicken stock ever.
