I never crack the shell on the edge of the container I'm putting them into. The reason I don't is, if you are using fresh eggs and they aren't washed you may spread any contamianates into the mix. I usually just use another egg to crack them open and the one that cracks is the one that gets used. Also you should always crack into a seperate container first and maybe use a screen or a slow pour out of the bowl after it settles for a few minutes to get any shells out.

I always crack eggs into a dish first so I can pick out bits of shell if needed, or discard the egg if there's anything weird about it.

I had a big double yolk egg last week I was about to eat for breakfast. I cracked it into a bowl, and it the white was dark red. There must have been a big blood clot in that one, or a blood vessel broke while that egg was forming. I know you can eat those, and if there's only a little blood, I usually do, but the dogs got to eat this one.

Go with Ms. Prissy....I am a nutritionist and as we teach food safety , we teach to never crack an egg directly into the pan or batter. Use a small bowl , the egg could be bad or have something in it, such as a blood spot etc. that would cause you to ruin all that is already in the pan. Also, this is a good place to check for the shell pieces that may have broken off. I cannot stand to crunch down on a shell. Every time I have been to a Huddle House this happens to me!
Happy and safe Cracking from now on!

A small blood spot won't ruin anything. Once it's mixed in you'd never know it was there, and it's not dangerous to eat one. Even a pinkish egg white won't hurt anything, I've eaten many of them.

But yeah, break them into a bowl anyway, it is safer, you can pick out shell bits, and if you're squeamish, you can pick out a blood spot, or feed that one to the dog.

I was going to suggest the same thing. I *think* I saw an episode of Alton Brown on the Food TV network show suggesting that eggs be cracked on a hard flat surface. I do, and rarely get shell pieces.

But, as also has been suggested, I crack them into a small dish before putting into the pan/recipe/whatever.... just in case.
