My NH male died about a month ago, so thats about how long, and I kept her in the coop so i could see if she was laying but hiding them for a couple days and got nothing

Hmm. How long ago was that?(the cooping) If she's free range, she def. might be hiding them. They often don't love the boxes as opposed to a nice prickly bush.

I let them out everyday and they go back in and come out at random times since I have dogs that need to go out as well too sometimes. I keep keeping her in the coop for days at a time though just to see, but I never get anything. I have two gardens and one has been overtaken by squash and the other by thorny blackberry thornless blackberry and mint. She could be hiding them in there but I never see her go into either of them, or near them for that matter.

Her comb isn't really red, so she doesn't look POL. Hmm...

Firstly, it's just an Easter Egger like you said. Cute lad. Secondly, I noticed the shiny feathering too. But I believe that is where the feathering is ruffled, and the down is pale white, so it appears shiny.
Pretty chickens.
