Wanting to put my Blue Jersey Giant cockerel in a poultry show or show case him, but have no idea where to start. Can anyone direct me in the right direction...

Check out Poultry Show Central. Lots of good information there. Most shows and fairs have been cancelled this year due to the pandemic.

It will depend on where you are located as to whether there will be a show available. As of right now the Oklahoma State Poultry Federation show in Shawnee, OK is still a go. The Ohio National has been cancelled, first time I can remember in my lifetime.
