the reason short spikes for say <1hr arnt always that bad is because an egg take longer than water to heat for the same volume of water, so although the air temp spikes as long as its for a short period internaly the temp on the inside of the egg wont shift much. however high temps particularly sustained ones are bad is because basicaly your dealing with proteins in one form or another inside an egg, and proteins have a pretty narrow tollerance band to tempreture, if the temp is too high proteins quickly denature and the molecules breakdown. have a go at candling in the next day or so and let us no how it goes.
