This is fair advice, however in reality I am not working in scientifically-controlled conditions and I suspect it would be near-impossible to achieve a reliable reading using a simple thermometer....

I would try using a meat thermometer. They are cheap and can be bought almost anywhere. You would be able to stick it in the incubator and leave it for a constant temp reading.
