I understand it takes 21 days to hatch eggs in a incubator, how does a hen sitting on her clutch take?

Same amount of time With incubators we're trying to mimic exactly what a hen does, so the hatch time is the same, unless you have lower or higher temperatures in your incubator, which can slow or speed development respectively.
