you are running that high? it should be down at the eggs, the idea is to have the center temp of the egg at 99.8 is ultimate temps for ebryos. so if you can put it in a water wigler or something at the same hight it will read internal temps or close to it.
Probe thermometer & water weasel (Water Wiggler, Water Snake) found on Amazon or Ebay make for EXCELLENT internal temp guides! The perfect internal temperature of an embryo is 99.5 degrees. If you can't find a water wiggler you can make your own with ziplock filled with water folded in half and insert the probe in the center middle. or you can attempt to make one from a ziplock​
or I use one of these folded with the probe in the middle​

I think all the chicks are out for this week's hatch. Total is 155. That blows away my old record of 114 in a single week. Lots of legbar pullets.
 
If you attach it to the exterior plastic yes you will get a false reading. Thats because the plastic is being influenced by two different temps, the outside room temp amd the interior bator temp. Depending on the room temp you could have a 20-30* difference between those two temps.

Exactly what I figured. I moved the thermometer (digital) at stuck it to the egg separators
