I'm hatching my first dozen eggs today is day 21. I see small poked holes and I hear some chirping. Humidity is at 70. Should I continue to wait?

I would wait. Chicks can be slow sometimes. and they may not be done absorbing the yolk and if you would help them now they might die.
How long have they been externally piped for?
 
It can take a whole day from pip to hatch, there's no need to even think about helping until after a day. helping could be fatal at this point. And yes you can open the incubator after they hatch to take them out, they won't shrink wrap.
