Incubation Troubles - please help.

Hello all. I am still having troubles with my incubating. I cracked open all the eggs that didnt hatch this time and will attach pics for input. Heres what im doing,

Home built incubator with old wine cooler.
39.9*C varying +/- 3*C
Humidity is close to 40 (i didnt get a chance to bump it up to 60 this round)
I turn them three times a day by opening the door and tilting the shelves
Heat is with a light bulb and a STC-1000 digital thermostat i calibrated with ice water
Two computer type fans, one draws air into the back area with bulb and the other pushes from the back area
I put the eggs fat end up in cut styrofoam cartins

After cracking the eggs 24 chanticleers were just liquid, 2 were 80% developed, 2 were fully developed but could not fully hatch, one hatched fine.
The blue eggs were amaeracauna. There were 7 of them. 2 were 25% developed, 2 were liquid, 2 were dried out to a paste.

We have two chanticleer roosters per 24 hens which are all free range. The ameracaunas have a rooster and three hens seperate from the others.

So, any suggestions? I have been trying to get this to work for 5 years now. Very frustrated. Thank you for any help.
 
39.9 C is much too high. On its own that's already nearly high enough to be killing the eggs. If it's going 3 degrees higher than that at times, that's high enough to kill the embryos by getting them too hot. You want the temperature to be around 37.5 C.

24 were just liquid. Unless there was a color to that liquid other than a normal egg color yellow and clear being normal. Then those would be unfertilized.

You could try more heat sources with lower output. Maybe another fan. Your set up sounds pretty good. The main thing i would work on is stabilizing your temperature swings. And checking for hot and cold spots.
 
The stc-1000 is what I run. I can get it down to +/- .3 deg cel. You can narrow that temp down quite a bit. I agree you have it set too high.
What is your ventilation like?
I have had problems similar to yours, pm me if you need help fine tuning your thermostat.
