I have a proofer; was used for donuts. It has 2 heating elements, 2 thermostats, and a fan. It will accept 10 18"x 18" trays. My top hatch only fluctuates like 1 degree. I get the proofer to fluctuate between 95-100. Is that too much change in temp? I have a small themostat and socket from a top hatch; would installing these be enough to correct the difference? I do not wanting anymore holes in it than possible.
Oops! The inside dimensions of the cabinet are 32"x 21"x 17". It has glass doors that need sealing and I need to insulate between the inside chamber and exterior shell.
