Can I replace the old thermostat with a digital?

You'll need to recalibrate it. Place your spare digital temp reader near the sides inside the incubator, than set the temperature range of where it needs to be. This might take some time to sort out.

Looks like you have a egg turner next to the element from what I can see.

You can but would need some working knowledge of how to rewire it.

The egg turner is a good 3 or 4 inches away from the element. Temp seems to be stabilizing again. I wonder if standing the lid on its side when candling has done this? I am definitely not up for wiring stuff lol.
