Incubator thermostat help

I have a GQF cabinet incubator that I want to replace the wafer thermostats with a digital thermostat. I have some pretty simple questions regarding wiring the new thermostat. Like do you bypass both of the wafer thermostats by installing a digital. I saw a thread from 2 years ago on here about this so I know its possible just hoping someone is familiar with doing this. Thank you for your help.

Do a google search for "Rush Lane Poultry". He has lots of videos about making incubators. My most recent build used a digital thermostat with 2 incandescent bulbs as the heat source. I can't help you with wiring diagrams, as hubby does that.
